Day 1... It's easier than you think!
Day 1 Meal Plan:
Breakfast- two soft-boiled eggs (organic, cage-free, happy chickens) seasoned with pepper, large mug of green tea, and an organic gala apple
Snack- half of a yellow pepper sliced
Lunch- organic mixed greens, cucumber slices, chopped yellow and red peppers, tomato, red onion slices, sliced baby bella mushrooms, chunks of chicken breast topped with a homemade salad dressing (see recipe below!).
Dinner- Breast of a rotisserie chicken with 'shroomy squashy spinach (see recipe below!).
Homemade Paleo Friendly Dressing:
1 TBSP mustard (check the ingredients! Some have sugar and nasty preservatives)
'Shroomy Squashy Spinach
1 bunch spinach
1 yellow squash
10 oz baby bella mushrooms
2 cloves garlic
Thinly slice squash
Thickly slice mushrooms
Heat a few tablespoons of water (or oil) in a skillet over medium heat
Add garlic, let brown a minute
Add squash slices and shrooms, stir
Once squash and shrooms have softened add spinach
Season with pepper and cover for 2 minutes (enough to let the spinach wilt)
Stir and Serve.
