Chicken Nuggets and Fries!!!

Who says you have to give up chicken nuggets and fries? NOT ME! 

Here are two great recipes for those times when you are really missing those All American Staples... 

Crispy Spicy Chicken Tenders

Sausage, Peppers, Onions *Recipe to follow later this week*  with Butternut Squash Fries!

Baked Squash Fries

Prep Time: 15 mins                              Total Time: 55 mins

butternut squash
sea salt
olive oil

parchment paper
cookie sheet

  1. Pre-heat oven to 425 degrees
  2. Peel and de-seed your butternut squash
  3. Slice squash in half
  4. Cut it up into french fry shapes
  5. Place on parchment paper on a cookie sheet
  6. Brush both side of the fries with olive oil
  7. Cover lightly with pepper and salt
  8. Place tray in your pre-heated oven and bake for 40 minutes or so, flipping halfway through baking process
  9. Fries are done when they are starting to brown on the edges and get crispy

Crispy Spicy Chicken Tenders

3 chicken breasts cut into tenders/nuggets
3 Cups almond flour
2 tsp. chili powder
2 tsp. garlic powder
1 1/2 tsp. black pepper
1 egg
1 tsp. salt
1/2 Cup Almond Milk
Olive oil

frying pan
2 glass bowls

  1. In a glass bowl mix together almond flour, chili powder, garlic powder, 1/2 tsp. salt, and 1 tsp pepper, and mix together well
  2. In another glass bowl, create egg wash with egg, 1/2 tsp. salt, 1/2 tsp. pepper, and almond milk
  3. Place a piece of chicken into the almond flour mix, coat chicken.  Take the chicken out and place in bowl of egg wash, stir to coat the chicken. Take the chicken from egg wash and place back in almond flour bowl and coat chicken. Place chicken onto parchment paper and allow to settle
  4. Heat oil in pan and add chicken, might be easier to do in batches. After 3-4min, flip over. They should be nice and brown in about 6-10 minutes. Remove chicken and put on plate. Keep repeating process until all chicken is cooked
