Beef. It's What For Dinner!

Tonight I'm giving you a recipe for an easy and wonderful, perfectly paleo dinner: Steak and Vegetables! 

 

Directions: 
1. Turn on grill to high heat
2. Salt and pepper both sides of the steak
3. Put steak on grill- sear on both sides ~3min each
4. Cook to you're liking (we like it rare--- nice and bloody!)
5. While steak is cooking- chop up any vegetables you have in the fridge
6. Steam veggies in a pan on the stove, add some lemon juice and garlic
          - I used carrots, broccoli and onions
7. Steam until vegetables are tender
8. Pepper (and salt, if you'd like) the vegetables.
9. Plate your food, and enjoy the simple deliciousness!

the name's Chard... Rainbow Chard

My first "new" vegetable encountered with my Urban Organic deliveries was Rainbow Chard! I had heard of it before, usually swiss never rainbow, but I had no idea what to do with it, and definitely had never had it in my refrigerator before!! So, if you're in the same boat as me, or just want a little more knowledge on this nutrition powerhouse-- -and a great recipe! hang on, here we go!

Chard, also known as Swiss chard, is a leafy vegetable. It is a multi-colored relative of the beetroot and one of the easiest vegetables to grow in your own garden! Chard may be steamed, sautéed, or braised, and it can be added to soups, stews, casseroles, and frittatas/omelets (YUM!). The leaves and stems may be cooked and served together, or prepared separately as two different vegetables; chard’s leaves can be prepared like spinach, and its stalks like asparagus. (In fact, its leaves serve as a good substitute for spinach in most recipes, but they will need to be cooked slightly longer) Fresh young chard can be used raw in salads, while mature chard leaves and stalks are typically cooked or sauteed (recipe below!); their bitterness fades with cooking, leaving a refined flavor which is more delicate than that of cooked spinach.

SOMBAK Organic Smoothie- breakfast of champions!

A smoothie is a delicious, portable, and easy way to get in the fruit and vegetable servings our bodies crave as well as fill our bellies. Unfortunately, if you are buying one that is pre-made, from a gym, or a health food store, you need to look closely at what they put in it. With smoothie chains popping up all over the place… and with them the promise of healthy, portable nutrition… the allure of a quick and easy, mess free smoothie might be too much to resist. But if you're not careful you might end up getting a smoothie that has just as many calories - and just as little nutrition - as a strawberry milkshake!  




Now, I am obviously going to tell you how easy it is to make a smoothie at home, and how rewarding it can be. But I know there are some occasions when you just don’t have the time, or energy to deal with the kitchen (trust me, most night’s its hard for me to get the motivation to cook). Urban Organic—the best kept secret!

"SAVE MONEY, SAVE TIME, SAVE THE PLANET!" that’s their motto…


Every Thursday for the past three weeks I have rushed home from work in anticipation of my weekly delivery from Urban Organic. I was introduced to Urban Organic through a co-worker, and can I just say--- what an awesome idea/company, I’m so happy she shared!


Urban Organic is a weekly (or bi-monthly) organic produce and grocery delivery service out of Brooklyn, NY. Over the past 10 years they have become the country's largest home delivery service of organic produce and groceries. Depending on where you live (sorry this one’s only for NY and NJ residents, but I urge you to look for similar services in your area, post them in the comments section if you find any!) they will deliver, right to your doorstep, Tuesday (Brooklyn and Staten Island), Wednesday (Manhattan), or Thursday (NY {Suffolk, Nassau, Bronx, Riverdale, Rockland and Westchester} NJ {Union, Essex, Bergen, Middlesex, Hudson & Passaic Counties}).


So- how does it work? Well, they bulk-buy produce, groceries and dairy goods from organic farmers' cooperatives, distributors and individual farmers (and they try to give local farmers as much of their business as possible). All of their produce is Certified Organic; so good, healthy, fresh fruits and vegetables to munch on all week long! I began by ordering the Original Value Box (as is required for NJ customers). The OVB delivers to your door between 15-18 different fruits and vegetables (about 2-3 of each)! This week’s box contained:

Pretty Girl Rock

I know this is a little off topic, but this blog is about health and wellness and that includes mental health and self-confidence… So, here we go---


While listening to the radio everyday driving to and from work, certain songs strike a chord with you (all those commuters out there, you know what I’m talking about, its that song you can’t stand while at the same time, you can’t get it out of your head!) the song of late is Pretty Girl Rock by Keri Hilson (@MissKeriBaby). At first listen, I was so irritated that this song was taking up valuable time on my drive, that I would change the station immediately. I was so shocked and saddened by the premise of the “pretty girl rock”… what about all those young women out there who are not “beautiful” in conventional ways, who are overweight, acne prone and lethargic (because they haven’t tried eating paleo yet!)? What goes through their heads every time that song comes on the radio, at sports practice, or a dance! How must they feel? How dare some R&B singer/songwriter make them feel even more undesirable!

S.A.D.? What Would Grok Do?

This winter has been particularly rough in the way of freezing cold temperatures, snow fall (we’re up to at least 60” of snowfall this winter in Hoboken!), and general dreariness--- hello shoveling and de-icing! It is no surprise that many of us are feeling down and out, and wondering if we’ve been affected by SAD.


Seasonal Affective Disorder (also known as SAD) refers to seasonal bouts of depression that occur every year, not just a case of cabin fever! Most often SAD symptoms begin in the fall and last through the cold winter months (less frequently SAD can occur during the spring/summer months, this is known as summer SAD or summer depression). While it is not certain what causes SAD: your circadian clock, melatonin levels, and serotonin levels can all play a role in developing the condition.

Day 1... It's easier than you think!

I know what you're thinking: "This is going to be too much work, I can't think of anything to eat, I'm going to STARVE without bread and pasta and cheese!!!" But all of these fears are unwarranted. Eating the paleo way is fresh, delicious, and EASY! So with a little thought (no more, I promise, than you would normally spend before heading to the grocery store to buy this week's groceries) you can cook up healthful meals and eat like a king all week! (It is impossible to overeat, I know--- I've tried!) Here is how I began...

Day 1 Meal Plan:


Breakfast- two soft-boiled eggs (organic, cage-free, happy chickens) seasoned with pepper, large mug of green tea, and an organic gala apple


Snack- half of a yellow pepper sliced


Lunch- organic mixed greens, cucumber slices, chopped yellow and red peppers, tomato, red onion slices, sliced baby bella mushrooms, chunks of chicken breast topped with a homemade salad dressing (see recipe below!).


Snack- handful of mixed nuts--- (ok,it was more like 2 handfuls!)-- walnuts, almonds, cashews, hazelnuts

 
Dinner- Breast of a rotisserie chicken with 'shroomy squashy spinach (see recipe below!).

So Easy A Caveman Can Do It... ummm DID IT!!!

So first off--- I have always hated the word diet. Maybe this is because I feel that I have spent most of my life "on a diet.” According to Merriam-Webster (http://www.merriam-webster.com/) a diet is: food and drink regularly provided or consumed or habitual nourishment. We need to start thinking about the word “diet” in this sense. While it can refer to a way of eating to help oneself lose weight, that is not what we want to focus on. We want to focus on this Paleolithic diet as a way of life, not as a DIET!!! It is a way of eating to make you healthy and fit (and if you loose some weight in the process all the better). So let’s get down to the facts of the Paleo Lifestyle!

Paleo in a Nutshell!

So, I’ve been getting a lot of strange looks and questions regarding my “newest fad.” I’ve been successful, thus far, in explaining that this is not some new fad diet (no more cabbage soup or hollywood cookie diet- no I haven't really tried that one!) BUT a way of life (and a good, scientifically sound idea!) Alot of my friends are still skeptical and just don't understand why I would "give up" bread and pasta and... CUPCAKES!!! My explination then brings me around to NELLY---That's what I call her--- she's my nervous stomach. She usually rears her ugly head when I am extremely stressed out or when I go throughout the day without eating, then reach that breaking point and shove something down my throat as fast as I can. Needless to say once she's here it's hard to get rid of her... my day is usually ruined, and unfortunately for anyone else with me- theirs is too! I never really saw any relation to the foods I was eating and Nelly, but I never thought to jot it down either… so she’s going to remain a mystery… Although I can say I've been eating Paleo for over a month now (only cheated a few times) and she has yet to stop by for a visit!! Maybe she's gone south for winter?? Maybe I should throw her a going away party and serve up some delicious paleo-friendly party recipes. I love a good party!

Cabbage Soup Recipe

Ingredients:

So to get the year started on the right foot I decided to began the first week with the cabbage soup diet--- not so much for weight loss, but rather to get all of the crap I had been putting in my body out!--- AND IT WAS HARD! Not only are you limited to what and when and where and how you can eat, but going out with friends is next to impossible. Here is my breakdown of the diet-

Day One:
Fruit: Eat all of the fruit you want (except bananas). Eat only your soup and the fruit for the first day. For drinks- unsweetened teas, cranberry juice and water.

Hello and Welcome!

Where should we begin... Ah yes, who am I, what is this blog about, and why should you spend you're valuable time with me! I have a passion for nutrition and fitness, and will share all I know and learn from here on out with you! I am starting this blog in the attempt to document my journey, and I hope you'll find it to be one worth following... My ultimate goal is that we will learn something about ourselves in the process.

I'm Erin Michaela, a born and bred Jersey girl who spends every weekend she can up in the Green Mountains of Vermont. I am inching up on the big 3-0 and need to reignite my passion for living due to a monotonous job that I am itching to leave behind in the pursuit of happiness, creativity, and purpose. I have a soft coated wheaten named Finnegan who is a joy (and a pain, as a young puppy can be!) I love to snowboard and hike, any day spent outside is a good one. I bleed Villanova Blue and love the New York Giants. I am newly married, and am looking forward to the future.

I began this year with the resolution to live a healthier life. I have struggled with weight for most of my life (although, sometimes I get told the struggle is only in my mind). In 2010 I fell of the gym wagon and lost most of my willpower against sweets, fried foods, and everything else! Needless to say after the ball dropped on New Year's Eve I made up my mind: THIS WOULD BE THE YEAR! I would finally stop worrying about what the scale said and instead listen to what my body was telling me.

I hope you'll join me on what promises to be a most exciting and healthy year!
